The counter faces the fire. You eat what the kitchen is proudest of that day, in the order it comes off the grill. Two seatings, 18:00 and 20:30. Wine pairing £42.

The room
One fire, and everything faces it.
The kitchen is a grill, a hearth and a wood store. There is no gas in the building. The fire is lit at eleven, burned down to embers by noon, and fed with split oak through service so the grill sits over heat rather than flame.
Meat comes whole from two farms in Suffolk and is aged in the cold room you walk past on the way in. Fish is whatever the day boats landed at Newlyn, which is why the menu says “plaice” and not a weight.
Vegetables get the same treatment as everything else: into the coals, out when they give. Half of what we cook is grown within an hour of the door.
